Banana Coconut Pancakes

Ingredients:

  • 1/2 cup of self rising flour (you can use all purpose flour and a teaspoon of baking soda instead)
  • 1 6 oz. cup of NOGA's Honey flavored Greek Yogurt
  • 1 egg (or 2 egg whites)
  • 2 Fresh bananas


Procedure:

1. In a small mixing bowl, mix the egg with NOGA's Greek yogurt until smooth. Add into the mixture the flour and mix well. The batter will be thick.

2. Preheat a large pan to medium heat. Spray with nonstick spray. Use a large spoon or ice cream scoop to scoop the batter into the pan. Spread each of the batter scoops into an even circle. Add bananas on top of each pancake. Cook for about 3 minutes or until golden brown, then flip and cook the other side for about 2 minutes, until it is golden brown too. Repeat with the remaining batter. Serve with additional fruit and/or syrup.
